India has many variety rice recipes, but this pudina rice recipe is my go-to recipe when I feel like having some simple yet tasty comfort food. Prepared in one pot using rice, mint leaves and coriander leaves, this mint rice is something you will fall in love with. Now let’s see how to make pudina rice quick and easy.
How to make pudina rice?
While we call this pudina rice here, we could also call it coriander rice because they both are primary ingredients. To make green rice we will first prepare green paste. Add green chilli, mint, coriander leaves and ginger in mixer and make a fine paste. In a separate kadai or pan heat oil and add mustard seeds, cumin, cashew, urad dal, chana dal, red chilli and curry leaves and let it turn aromatic. Then we add the green paste and cook it until oil starts leaving the sides. Finally we add cooked rice to it, mix well and take it out. Serve pudina rice with any curry, or just raita and it will taste just great!

Cooked rice 3 cup
Mint 1/2 cup
Coriander leaves 1/4 cup
Green chilli 5
Ginger 1 inch
Oil 3 tbsp
Cashew 12
Mustard seeds 1 tsp
