This is a most desired soup in the south. Heck, I don't know, maybe Northerners seek it out as well. I just know, if you go to a Sunday brunch in the south, people will look to see if Turtle Soup is on the menu. It is also often serve on the menu as an appetizer at many up-scaled Cajun/Creole restaurants. There are many different versions of this recipe and this is by no means a family secret, although my mother's father was one of the people who was instrumental in making turtle soup a widely known dish. I remember watching him come in with turtles from a nights haul, and to me, as a young boy, they looked like dinosaurs. I sure wish he would have lived long enough for me to see him cook his recipe. These were the people who had to know how to cook, because dinner was whatever you brought home from the swamps that night/day and you had to know how to make it taste good.
