Here's how to make my original recipe for Crab n' Duff. For this one, I wanted a sweet and buttery dough, with a savory crab filling and a creamy sauce. I can not take credit for the idea. The Lockharts have a food truck called 'Sea Duff and Ocean Foam" that has many types of duff with many different sauces. Contact Joan-Lockhart Culmer at 427-7957 to find out where they'll be popping up next. I used crabs that I got from Tara of Long Island and fresh herbs from my friend Carlene.
I wanted a more old-fashioned duff type, something not too fluffy, but if you want yours fluffy, steam it for about 20 minutes and watch it intently You want the duff to spring up at the touch. If you want a duff like mine, then steam it for 20-30 minutes, it will be very firm.
