Let’s Cook! Episode 4 - Suman (Sweetened Rice Cake)
Today on May-may's Kitchen, we will be making Suman, also known as Budbud in Bisaya.
Preparation time: 1 hour
Cooking time: 45 minutes
Ingredients:
2 cups glutinous rice
2 cups coconut milk
1/2 cup white sugar
1 teaspoon salt
Banana leaves
Makes 13 pieces of Suman
STEPS:
1) Soak glutinous rice in cool water for 1 hour
2) Pass banana leaves over open flame for few seconds to release oil and make leaves soft
3) Trim banana leaves to 13 pieces of 10 inch strips as well as 26 pieces of 1/2 inch strips. Wipe residue off the leaves and cut any hard edges off.
4) Combine salt, sugar, and coconut milk in pan over medium heat. Stir until sugar and salt fully dissolve, about 1 minute.
5) Drain water from rice and add rice to the coconut mixture. Stir often until rice has fully absorbed liquid, about 15 minutes.
6) Take rice off heat and let cool for 15 minutes.
7) Add 2-3 tablespoons of rice to each 10 inch banana leaf strip. Spread evenly and roll into cylinders. Fold sides over.
8) For every 2 suman wraps, tie together with 2 1/2 inch banana leaf strips.
9) Add to large pot and add hot water 1 inch deep. Boil for 45 minutes.
10) To enjoy, unwrap Suman from banana leaf wrap and plate!
(Optional) Dip in brown sugar, latik, or caramel sauce!!
Best eaten warm and great paired with coffee.
