SO TASTY Braised CHICKEN with POTATOES cooked by Aunty Mary. This Chinese style cooking by braising makes the chicken and potatoes taste very delicious. This is another easy recipe that can be cooked at home. It tastes even better the next day. This braised chicken and potato dish is a great dish for any family events or dinners with friends.
Aunty Mary shows how to cook this chicken and potato dish by firstly frying everything for a while first before adding them all together in a big pan or pot and then cooking on low to medium heat until the chicken is cooked and the sauce is reduced, but not dried up. The sauce is very good to drizzle over rice or noodles.
Chicken thighs and drumsticks are used because they are more tender. But you can use breast meat too or deboned meat.
Baking potatoes are used here because they become very creamy and delicious after braising.
Ingredients
2 kg chicken legs (remove skin and cut at the joints)
1/2 bulb garlic, peeled
1 knob ginger, sliced
3 medium sized brown onions
4 big potatoes, peeled and cut into wedges
Oil for pan frying
Seasoning sauce
4 Tbsp brown sugar
3 Tbsp honey
3 Tbsp hoisin sauce
4 Tbsp cooking wine
4 Tbsp dark soya sauce
3 tbsp oyster sauce
