Hi garden friends! Did you know that Sweet potato leaves are edible?
In Asia, sweet potato leaves are commonly cooked and consumed in a variety of ways. Sweet potato vine plant is a tender green leaves with subtle flavour and far less in oxalic acid than spinach. They grow so prolifically, if you didn’t eat them, they will HAPPILY take over your garden!
This video shows you how to grow leaves from a store bought sweet potato. There are many types of sweet potatoes, purple, yellow, orange, white, they will grow you different variety of leaves which are very nutritious and delicious at the same time! If you read up about the leaves, it was found that the leaves provide various nutrients vitamins and minerals! To add, it is an easy to grow plant, isn't that already a garden bonus!
In this video, the sprouts or "Slips" are picked from the tuber and planted into soil. I have also grown leaves by direct planting the tuber into soil (fully covered) and let the leaves slowly take over an entire pot. This method works too but the caveat here is you might run into problems such as "tuber rot" due to water logging or over watering. The safer approach would be to separate slips likewise shown in this video, and plant them individually.
I would highly recommend sweet potato vine plant in an edible garden. They are a cut and grow back perennial plant so you should not miss it!
