This is a great meal idea whether you are vegan or vegetarian or looking to cut back on meat!

★Recipe Ingredients★
2 tbsp olive oil
2 medium sweet potatoes (about 4 cups, cubed)
1 sweet onion, diced
6 cloves garlic, minced
1 tsp chili powder
1 tsp smoked paprika
1 tsp cumin
1 tsp cinnamon (or 1 stick)
1/2 tsp black pepper (more or less to taste)
1/2 tsp salt (more or less to taste)
1 15oz can chickpeas, drained and rinsed
1 15oz can cannelini beans, drained and rinsed
1-2 tbsp tahini
2 15oz cans fire roasted tomatoes
2 cups fresh spinach
