Merry Christmas everyone. For this occasion, I wanted to share with you, a Christmas Adventure that surprised us in a lovely manner during yesterday’s Christmas lunch.

In the family, we have the tradition to open old-back vintage wines from our region Friuli Venezia Giulia and from our favorite wine regions of the world.

Of the different back vintages we have opened, one stood out because of its complexity, character, and finesse despite its 26 years of age, and I must add with little hope from the winery itself. ;)

It was, however, a lovely surprise a fine bubble that kept the wine alive as we enjoyed it with delicious seafood spaghetti.

After 26 years the Applause by Collavini has truly become a meditation bubble. I am glad that we were able to enjoy its last signs of life.
