Ingredients:
1. Star anise – 1
2. Mace – 1
3. Cloves – 6
4. Cinnamon stick – 1
5. Bay leaves – 2
6. Cardamom pods – 2
7. Fennel seeds – ½ tsp
8. Ginger garlic paste – 2 tbsp
9. Green chilies – 5-6
10. Fresh mint leaves – a handful
11. Onions – 3 medium-sized
12. Tomatoes – 6-7
13. Rock salt – as required
14. Turmeric powder – ½ tsp
15. Fresh coriander leaves – a handful
16. Raw rice – 200g
Preparation Steps:
1. Blend tomatoes into a smooth puree without adding water.
2. Wash the rice thoroughly and soak it for 30 minutes.
3. Heat 3 tbsp oil and 2 tbsp ghee in a pressure cooker.
4. Add whole spices (star anise, mace, cloves, cinnamon, bay leaves, cardamom, fennel seeds) and sauté.
5. Toss in green chilies; once they change color, add onions and sauté until golden.
6. Stir in ginger garlic paste, turmeric powder, and tomato puree. Cook until the raw smell disappears.
7. Add 2 cups (400-450 ml) of water, bring it to a boil, and season with salt.
8. Add the soaked rice, mix well, and adjust seasoning if needed.
9. Close the lid and pressure cook for two whistles.
10. Let the pressure release naturally, fluff the rice gently, and garnish with coriander leaves.
