Pen Cai prices nowadays are ridiculous, at almost $1,000 for some hotels, this is why we only make and eat this at home for a fraction of that kind of price.
Start by soaking a piece of dried fish maw overnight. Soak 6 to 8 Chinese mushrooms for 2 hours. Poach 1 sea cucumber in simmering water for at least an hour or until it is soft.
Sear an entire pork knuckle in a large pot on all sides for a few minutes until it is lightly browned all over. Then add 1 chopped leek and 1 piece of Jin Hua ham or waxed pork leg.
Add water to cover the pot and bring to a soft boil. Lower the heat when it’s bubbling and let it simmer for at least 3 hours.
After 3 hours, remove the knuckle and let it cool down. The bones should be easily removable by hand. Return the bones to the simmering broth and cut the meat into smaller pieces,
Add the meat into the base of a large claypot. Add a handful of dried scallops and dried oysters. Next, arrange the poached sea cucumbers, dried fish maw and the soaked mushrooms neatly for the next layer.
Sieve the pork broth into a smaller pot to remove any scum or impurities. Bring to a boil and season with 1 tbsp light soya sauce, 1 tbsp dark soya sauce, 1 tbsp oyster sauce and some Sarawak white pepper.
Make a slurry with 2 tbsp corn flour and 6 tbsp water. Slowly add in the slurry until it thickens up slightly. We recommend not to make the pen cai broth too starchy as it will taste better this way.
Add this seasoned broth into the claypot until it is half full and covering most of the ingredients. Cover and simmer the claypot on low heat for 45 minutes. The broth will taste incredibly good after that.
After 45 minutes, open the cover and add 6 to 8 scallops, 6 to 8 prawns with shell on and a handful of broccoli. Add some Fatt Choy in the Center. Cover and simmer for an additional 15 minutes to fully cook the seafood and vegetables.
Finally, open again and add 6 to 8 abalone. Cover and simply cook for 5 minutes to blanch the abalone. Once they are blanched, the pen cai is done!
Making this at home is not only cheaper, you can control what you put inside and make a really delicious and amazing broth that will absolutely wow your family.
