Ingredients:
Coconut oil - 3-4 tbsp
Mustard seeds - 2 tsp
Fenugreek seeds (methi) - 1 tsp
Shallots - 8-12, sliced
Dried red chillies - 2-3
Ginger, finely chopped - 2-3 tbsp
Garlic, finely chopped - 2-3 tbsp
Curry leaves - 10-12
Turmeric powder - ½ tsp
Red chilli powder - 2 tbsp
Water - (as required)
Kokum - 7-9 pieces
Kingfish (or other fish) - 4-5 pieces
Additional curry leaves - (for garnish)
Process:
• Prepare the Base: In a vessel, heat coconut oil over medium heat. Add mustard seeds and fenugreek seeds. Once they crackle, add sliced shallots and sauté until slightly golden.
• Add Aromatics: Stir in dried red chillies, chopped ginger, garlic, and curry leaves. Sauté for a couple of minutes until fragrant.
• Make the Curry Paste: Add turmeric and red chilli powder. Mix well, then add water to create a curry base. Allow it to cook for a few minutes.
• Incorporate Kokum and Fish: Add the kokum and kingfish pieces to the curry. Toss in a few more curry leaves and let it simmer until the fish is cooked through.
• Serve: Once cooked, serve hot with rice.
