Vegan Sesame Tofu and Eggplant Recipe
Ingredients:
- Eggplant: 50g
- Tofu blocks: 50g
- Fresh cilantro: 20g, minced
- Garlic cloves: 2-3, finely chopped
- Red chili flakes: 1/2 tsp
- Sesame seeds: 1 tsp
- Vinegar: 1/2 tsp
- Soy sauce: 1/2 tsp
- Salt and pepper, to taste
- Olive oil: 2 tsp
Method:
1. Mix vinegar, garlic, and red chili flakes in a bowl.
2. Peel and julienne the eggplant into "noodles."
3. Add eggplant to the marinade along with half of the cilantro.
4. In a pan over medium-low heat, cook the eggplant in olive oil until it becomes soft.
5. Season eggplant with salt and pepper and mix well.
6. Add the remaining cilantro and transfer the eggplant noodles to a dish.
7. Coat the tofu blocks with sesame seeds.
8. In a pan, heat oil and place the tofu blocks.
9. Add soy sauce and cook the tofu until it becomes browned and caramelized with the soy sauce.
10. Serve the noodles and place the tofu on top of them.
