Professor Lustig a pediatric endocrinologist and expert on the metabolic impacts of sugar, discussed the profound effects of fructose and other environmental factors on obesity. He emphasized that a gram of fructose causes more weight gain and fat deposition than a gram of any other substance, including fat itself. Dr. Lustig presented two prevailing models of obesity: the energy balance model and the carbohydrate-insulin model. He argued that neither fully explains the obesity epidemic, especially given the increase in obesity among infants who do not diet or exercise.
Dr. Lustig introduced the concept of obesogens. A group of chemicals that disrupt endocrine function and promote fat storage. He highlighted the significant impact of these chemicals, particularly on mitochondrial function, and how they contribute to obesity. He presented the "Redux model," suggesting that reactive oxygen species (ROS) generated by these obesogens and certain foods like fructose lead to increased fat storage and infact Fructose is natural obesogen.
He stressed the importance of addressing fructose consumption, which can be controlled by eliminating high fructose content from processed foods. Dr. Lustig's presentation underscored the complexity of obesity, influenced by diet, environmental chemicals, and genetic factors, and called for a comprehensive approach to prevention, starting with reducing sugar intake.
