Welcome back to our @EktasKitchen Today, we're whipping up a delightful twist on a classic Indian dish – Lauki Kofta Curry, made effortlessly using an air fryer. Trust me, this recipe is a game-changer!
ingredients:

Air Fryer Lauki Kofta
600 grams peeled Lauki (bottle gourd, Doodhi)
1/ tsp turmeric powder
1 tsp red chilli powder
1/2 tsp black pepper powder
1 tsp coriander powder
1/2 tsp cumin powder
1 tsp crushed carom seeds
1 tbsp ginger garlic chilli paste
1 chopped onion
coriander leaves
salt to taste
1 cup gram flour (besan)
Olive oil

Lauki Kofta Curry
3 tbsp oil
1 tsp cumin seeds
1 tbsp crushed ginger and green chilli
3 finely chopped onion
2 chopped tomatoes
salt to taste
1 tbsp garlic cube
1/2 tsp black pepper
1/2 tsp cumin powder
2 tsp coriander powder
1 tsp red chilli powder
1 tsp red chilli powder
1/4 tsp turmeric powder
1 and 1/2 tsp kasoori methi
1/2 tsp garam masala
coriander leaves
Preparation

To start off, let's prepare our koftas. Grate the lauki and put into the bowl. Put some salt and leave for 5 minutes. Then squeeze out the excess water. Then add Air Fryer Lauki Kofta ingredients given above. Mix well.
Now, here comes the magic of the air fryer! Preheat it, Then place parchment paper and apply olive oil on it. then pop in our koftas. No need to deep fry them – the air fryer will give them that perfect crunch with just a fraction of the oil.
Set cosori air fryer for 18 minutes at 190 degree c. After 8 minutes apply olive oil and keep on fliping in between and once golden brown leave it inside the basket.
While our koftas are getting crispy, let's work on our rich and flavorful curry.
Take 3 tbsp oil in a pan and add 1 tsp cumin seeds and saute for few seconds. Then add 1 tbsp crushed ginger and chilli and saute for few seconds.Then add 3 finely chopped onion and cook until golden brown. Then add 2 chopped tomatoes and salt to taste. Cook until tomato is soft. Then add 1 tbsp garlic cube, 1/2 tsp black pepper,1/2 tsp cumin powder,2 tsp coriander powder,1 tsp red chilli powder,1 tsp red chilli powder,1/4 tsp turmeric powder and 1/4 cup water. cook until oil is released. Then add 1 and 1/2 tsp kasoori methi and 1/2 tsp garam masala. Then add 4 cups hot water. Mix well. Then add coriander leaves and mix well and cook for 2 minutes covering on medium flame. Once it starts boiling, place air fried kofta and switch off the flame. Mix well and cover fo 2 minutes and then ready for serve
And now, the moment of truth – our air-fried koftas are ready! Golden brown and perfectly crispy, without all the excess oil. Let's gently drop them into our luscious curry.
