This amazing product replicates pulled meat, simmering for 1 hour adds to the best result. High in vitamin C & potassium which aids in lowering blood pressure. A weekly must, serve with tacos or just rolls.
INGREDIENTS
* 1 tsp oil or stock
* 2 red onions-diced
* 4 garlic-minced
* 1 large eggplant-2cm cubed
* 2(400g) cans Young Jackfruit
* 1/4 cup balsamic vinegar
* 1 Tbsp brown sugar
* 3 (400g)cans Cherry Tomatoes
* 1 cup vegan stock
* 1 cup fresh basil leaves
* 500g pasta of choice
METHOD
* PREP VEGGIES- Dice onion, cube eggplant, mince garlic,
shred rinse & drained Jackfruit removing seeds.
* Cook pasta & set aside.
* Sauté in large pot onion & garlic-3 min-soften.
* Add eggplant-cook-5 min to soften.
* Stir thru jackfruit, vinegar, sugar, tomatoes+stock.
* Bring to boil.
* Cover & simmer for 1 hour stir occasionally
or until sauce thickens.
* Lower heat add 3/4 of basil cook-30 min.
* Stir thru cooked pasta-5 min.
* Top with remaining basil.
* Optional-NOOCH topping.
