Hey Everyone! Ive been experimenting on a ton of desserts lately, this one I specifically made for my boyfriend. He told me he wanted me to make him a raspberry pie, so instead of just raspberry he said he didn't mind if I made a berry pie crumble. I worked on the recipe a few time, altered a few things and this is what came about! HE LOVES IT! Enjoy :)
INGREDIENTS:
CRUST:
2.5 cups of Almond Flour
1.5 cups Oat Flour (gluten free)
5 Tbsp Coconut sugar
3 Tbsp arrowroot starch
1/2 tsp Vanilla bean powder or 1 tsp vanilla extract
8-10 Tbsp of COLD water
BERRY FILLING:
8 cups of Berries (I used blackberries, raspberries & mulberries)
1/2 cup of maple syrup
1/2 cup of arrowroot starch
1 Tbsp lemon juice
1/2 tsp vanilla bean powder or 1 tsp of vanilla extract
CRUMBLE:
1 cup Gluten free Oat flour
1/2 cup of brown rice flour
1/4 cup of coconut sugar
1/2 tsp of vanilla bean powder or 1 tsp of vanilla extract
3 Tbsp of melted coconut oil or coconut cream
NOTES:
Bake at 350 Degrees F for 30 minutes, then at 400 for 10 minutes until golden brown.
