Can you make your own vegan mayonnaise? Of course! And aquafaba mayo is one of the easiest vegan mayos to make at home. This vegan recipe produces a classic mayonnaise that is thick, creamy, slightly tangy and simply perfect for all your sandwich needs. The ingredients are basically the same as with a normal mayonnaise recipe, except we replace the traditional egg with aquafaba and a sprinkle of eggy-tasting black salt. Just like with most mayo, it’s gluten-free. Unlike many vegan mayo recipes floating around, this recipe is soy-free and nut-free as well.
What is Aquafaba? It's the thick cooking water from chickpeas and other legumes. You can get it from draining a can of beans and saving the water. You can also make it yourself from dry beans, like in this tutorial: [ Ссылка ]
**ONLY USE THICK AQUAFABA FOR THIS RECIPE**
If your aquafaba looks watery, boil it to reduce the volume. When it cools, it should be slimy and thick like egg white.
**DON'T GO OVERBOARD WITH THE BLACK SALT**
That stuff is strong and a little goes a long way.
