Soba Noodles
Soba Noodles is a Japanese Noodle recipe that excites your palate with myriad textures and flavours. With loads of crunchy veggies and the sharp flavours of ginger, garlic and soy sauce, this dish promises fun in each mouthful. A dash of honey balances the flavours beautifully making this a dish par excellence. Just ensure that the noodles is cooked right and not overcooked.
Preparation Time: 15 minutes.
Cooking Time: 5 minutes.
Serves 2.
2 cups boiled soba noodles (buckwheat noodles)
2 tsp sesame (til) oil
1 tbsp finely chopped garlic (lehsun)
1 tsp finely chopped ginger (adrak)
2 tbsp finely chopped celery (ajmoda)
½ cup thinly sliced onions
¼ cup thinly sliced red capsicum
¼ cup carrot juliennes
¼ cup red cabbage
2 tsp soy sauce
½ tsp sugar
2 tsp honey
Salt to taste
For the garnish
1 tsp roasted black sesame seeds
1. Heat the oil in a deep non-stick pan, add the garlic, ginger and celery and sauté on a high flame for a few seconds.
2. Add the onions, capsicum, carrot and red cabbage, mix well and cook on a high flame for 2 minutes, while stirring it continuously.
3. Add the noodles, soy sauce, sugar, honey and salt, toss well on a high flame for 2 minutes, while stirring it continuously.
4. Serve immediately garnished with black sesame seeds.
