Chicken Marsala:
This is a great option to make your children eat more veggies.
Ingredients:
Chicken breast pieces 2 lb
Shallots 2 cups diced
leeks ½ bunch
Shitake mushrooms - 2 or button mushrooms 12
Zucchini 1
Red bell pepper, tomato, spinach optional
Marsala Wine, cooking ½ cup
Chicken stock 3 cups
Avocado oil 4 tbsp for frying chicken
Butter or Ghee 2 tbsp for vegetables
Flour Paleo GF 1 cup
Thyme, Oregano 1 tbsp
Salt and pepper to taste
Procedure:
Slice Chicken breast into two thin slices, pound it by placing in ziplock bag. Take Paleo GF flour add salt and pepper. Coat chicken slices with flour. Saute in avocado oil. Keep it aside.
Add shiitake mushrooms, leeks, shallots. Add butter and saute for ten minutes. Then add chicken stock, then add wine. Add salt, pepper, thyme and oregano. Add fried chicken pieces.
Let it cook on open flame for five minutes. and then cover and simmer it for about 15 minutes.
