- ¼ tsp black salt
- Pinch of regular salt
- 3 tbsp water
### Instructions:
1. **Heat the Oil:** In a pan, heat the cooking oil over medium heat.
2. **Sauté Pastes:** Add the ginger and garlic pastes to the pan. Increase the heat slightly and sauté until the raw smell disappears.
3. **Add Dry Spices:** Reduce the heat to low, then stir in the red chili powder and turmeric. Cook until the oil starts to separate from the spices.
4. **Mix Remaining Spices:** Add cumin, coriander, garam masala, and black salt. Mix well to combine all the spices.
5. **Cook with Water:** Pour in 3 tablespoons of water, cover the pan, and let the spice mixture cook for 7-8 minutes on low heat. This allows the flavors to meld together.
6. **Final Seasoning:** After the cooking is complete, add a pinch of regular salt, adjust according to taste.
7. **Cool and Store:** Remove from heat and allow the oil to cool. Store it in an airtight container.
