The Game and Forest Menu at Noma presented such a range of dishes staying true to its theme while putting care & precision to each ingredient.
They prepared reindeer 3 different ways. First with the reindeer brain custard, reindeer marrow caramel closed out our meal with a sweet nod to how we began, and of course there was the reindeer penis ragout, which I have to say I loved! Paired with caviar and grains, a saltiness and nice texture were added to this standout protein.
