Crispy Pork Belly or “Moo Krob” in Thai is usually a deep-fried pork belly. This recipe uses an air fryer to cook the meat. It doesn't require salt crusts and drying the skin out in the fridge for 12-24 hours either. So, this recipe is very easy and simple to make at home!

INGREDIENTS

500 g pork belly, hair removed if any
1 tbsp white distilled vinegar
1 tsp Himalayan salt
3 tbsp water
INSTRUCTIONS
===========
• To wrap the pork belly with aluminum foil.
o Lay the pork belly on the foil, skin side up.
o Fold the foil in half. Leaving space about 4-5 inches from the pork skin to top. Crimp it tightly over the top.
o Fold one open end tightly to enclose food.
o Add water to the other open end and fold it to completely enclose food; creating foil packet.
• Place the packet in the air fryer bucket. Air fry the packet at 200 degrees Celsius for 20 minutes.
• Once done, remove pork belly from the air fryer. Let is rest on a rack for 10 minutes or until cool.
• Get a meat skewer or a metal fork and punch lots of holes into the skin of the pork belly. Do not punch holes so deep that it reaches the meat.
• Sprinkle half the salt on the pork skin and brush with vinegar.
• Flip over. Sprinkle salt on the bottom of the pork belly and rub the meat.
• Place back pork belly in air fryer basket. Cook for 30-35 minutes at 200 degrees Celsius.
• Once done. Remove pork belly from the air fryer, then allow to rest for 10-15 minutes before cutting.
• Cut and serve with seafood dipping sauce! Enjoy!
