Zaalouk Aubergine : The healthy moroccan salad

Zaalouk for 2 people:
Ingredients:
You will need:
1/2 cup of olive oil
½ Lemon
2 Tomatoes
2 Aubergines
2 gloves of garlic
Parsley
and Spices:
Ginger powder,Turmeric, Black pepper, Paprika powder, salt
Instruction:
1.Chop the parsley
2.Peel the skin off the aubergine, cut the flesh into small pieces.
3. Add the aubergine into a wide saucepan, pour the olive oil on top, set over a light heat and lightly fry the aubergines
4. Skin the tomatoes and chop them into small pieces.
5. Add them to the pan and stir it
6. Add ½ teaspoons of :
Ginger powder
Turmeric
Black pepper
Paprika powder
a pinch of salt
7. Add the chopped parsley
8. Continuously press the aubergine with a wooden spoon and simmer for 5-10 minutes until thick and sweet.
9. Thinly slice the garlic and add it to the pan
Taste and add more of any ingredients you think it might need ;)
