This Chawal ki Kheer recipe with the richness of dry fruits is a dessert you can easily make at home, without having to go out.
CHAWAL KI KHEER
Ingredients
2 liters milk
1½ cup sugar
½ cup rice, washed, soaked and drained
Green cardamom powder & whole (coarsely crushed)
2 tbsps roughly chopped almonds
2 tbsps chopped cashew nuts
2 tbsps Muskmelon seeds
2 tbsps Raisins
A few saffron strands
Method
1. Roughly chop cashew nuts and almonds. Open green cardamom pods.
2. Bring milk to a boil in a deep pan, add rice and mix well. Cook for 15-20 minutes or till the rice is almost cooked.
3. Add sugar and mix, cook for 1-2 minutes. Add green cardamoms, chopped nuts, melon seeds, raisins and mix well. Cook for 1-2 minutes.
4. Add saffron, mix and reduce the heat to low and cook till mixture thickens slightly.
5. Transfer into serving bowl and serve.
