Try mixing up your crunchy raw salad for this warm and sweet delicious roasted pumpkin spinach & arugula salad.
2 cups of pumpkin, chopped
1/2 onion, sliced
Wash and dry Arugula & Spinach
Slice cherry tomatoes
Lay on a lines baking sheet
Add olive oil
Fresh or dried thyme
Paprika (smoked or sweet)
Ground coriander
Salt and pepper
Roast in 410f oven for 25-30 minutes.
Toss around a bit half way through
Dressing:
Place following in blender
1 clove garlic
1- 2 tbsp Dijon mustard
1/4 cup unsweetened yogurt
1 tbsp maple syrup
Juice of 1 lemon (about 2-3 tbsp)
1 tbsp olive oil
Salt and pepper
Blend
Put roasted pumpkin and onion on top of greens and tomatoe.
Grate a little parm cheese
Pour dressing on top.
