Ingredients
Full fat milk - 5 cups
Sugar -7tbsp or 3/4 cup
Hot Water -1 cup
Rice -1/2 cup
Salt - one pinch
Method
Pour 5 glasses of full fat milk and add sugar into the cooker. Cook the milk for 1 hour on low flame, to get the pink shade. The cooker should be free from any masala stains. Close the cooker after the milk is slightly boiled. Allow the pressure to release by itself. Strain the cream from the milk.Take 1/2 cup payasam rice/ unakkal ari and soak it for half an hour. Wash the rice and add it to the milk along with water. Let the milk boil well. Stir occasionally. Cook for half an hour with the whistle on . when the pressure cools down, open the pressure cooker. Add a pinch of salt. Add thulasi leaf for the aroma.
