See salad in a whole new light with this GRATED CARROT SALAD. It’s delicious!
Lately I’ve been trying to prepare more vegetarian and vegan recipes in order to add more vegetables into my diet. Experts agree that eating more vegetables is good for our general health, our minds and our bodies and because veggies are loaded with vitamins and minerals. I’m all for it.
This GRATED CARROT SALAD gets top marks for being a vegetarian salad recipe that’s extra delicious with a super fresh taste. I also like the process of making it, which is made even easier if you have a food processor. If not, just use a box grater and a bit of elbow grease. Hey, wait a second, we could be on to something! Making this salad is like a workout and a healthy meal all in one. We’re all for it!
INGREDIENTS
Much of the brilliance of this salad goes to that perfect balance of flavour and presentation. I love the fresh flavour combination of carrot with cilantro, parsley and a little hint of cumin. I’m also amazed at how appetizing the salad is with its orange, green and white colour profile, created by the mix of carrots, chopped herbs, onion and garlic.
SERVE IT UP
In a perfect world, time will be on your side! You’ll make this healthy salad recipe and serve it straight away. I think it tastes especially wonderful when enjoyed soon after it’s made. Much of that goes to the crunchiness of the freshly grated carrot.
On the rare occasions when you do have leftovers, refrigerate it and enjoy it the next day. It makes the perfect side when served with our ROASTED CHICKEN, this SWEET & SPICY SALMON and our OVEN-ROASTED pork tenderloin. It’s also wonderful when used almost like a condiment and added onto a favourite sandwich.

Enjoy this appetizing, fresh-tasting GRATED CARROT SALAD.
INGREDIENTS
1 lb peeled carrots, grated
¼ of a white onion
2 cloves of garlic
2 tablespoons of extra-virgin olive oil
2 tablespoons of apple cider vinegar
¼ teaspoon of ground cumin
2 tablespoons of fresh cilantro, chopped
2 tablespoons of fresh flat-leaf parsley, chopped
salt to taste
INSTRUCTIONS
1) Chop the onion and place into a bowl of cold water to soak for 15 minutes. Drain and pat dry.
2) Place onion, garlic, oil vinegar and cumin into a food processor or handy chopper and pulse to chop.
3) Place carrots into a large bowl with dressing and fresh herbs. Toss and taste. Season with salt and serve.
