Delicious and easy slow cooker vegetarian curry made from scratch with very little effort, just put all the ingredients into the crock pot, turn it on and away you go! Add extra curry paste if you like your curry on the spicy side or alternatively you could use a hotter curry paste if you prefer.
Ingredients
1 x 400g tin chopped tomatoes
1 x 400g tin chickpeas
1 tbsp mild curry paste
1 x red pepper
1 x red onion
1 x vegetable stock cube
2 x pineapple rings
Add the chopped tomatoes, curry paste and vegetable stock cube to the slow cooker. Stir.
Add the chopped red pepper, red onion and chopped pineapple rings.
Add the chickpeas. Stir.
Cook on high for 4 hours or low for 6-8 hours
Once cooked enjoy your slow cooker chickpea curry! This curry is a great main meal when served with rice.
