Cocoa powder is a product obtained by grinding cocoa beans, containing about 70% cocoa butter and 15–22% starch. Cocoa powder has a chocolate flavor but lacks the taste of sweetness present in chocolate derived from cacao nibs or solids. It is therefore used as an ingredient to prepare drinks, foods, desserts etc. where it is required.
Cocoa powder contains among other things: protein, carbohydrates, fiber and saturated fats. It also contains high amounts of magnesium and antioxidants such as polyphenols so cocoa has some nutritional value.
When compared to the same quantity of chocolate derived from cacao nibs or solids, cocoa powder would provide less nutrition. However, since cocoa powder is not eaten alone and is added to other ingredients while preparing foods and drinks, it provides more than chocolate derived from cacao nibs or solids.
Cocoa powder has a high amount of saturated fat and should be taken in moderation or avoided if cardiovascular disease is a risk. Since the fats are saturated, they are able to retain their molecular structure.
The regular intake of cocoa powder is associated with benefits such as preventing cardiovascular disease and promoting healthy skin. However, an excessive intake may also have some side effects including constipation, diarrhea, gas production and weight gain.
