Mike is using this test fresco of Giotto's putti to practice the "stacco" process. Earlier, he separated the fresco from its support and glued its backside to a thick piece of cotton. In this video Mike removes the glue and fabric that was applied to protect the image from damage while he separated the plaster from its previous support.
