‘Tis the season for holiday drinks and this one is a festive twist on the classic eggnog. Rich, creamy, and infused with warm spices, this drink is the ultimate holiday treat!
Ingredients
• 2 cups Milk
• 1 cup Heavy cream
• 6 Egg yolks
• 1/2 cup Castor sugar
• Pinch of Salt
• 1 teaspoon Vanilla extract
• 1/4 cup (60ml) Baileys
• 1/8 teaspoon Cinnamon powder
• 1/8 teaspoon Nutmeg powder
• 1/8 teaspoon Clove powder
Method
1. Separate the egg yolks from the whites and whisk the yolks with the castor sugar until pale foamy and creamy.
2. In a saucepan, combine the milk and heavy cream and bring to a gentle boil.
3. Temper the egg yolk mixture by slowly pouring in the hot milk and cream while whisking continuously.
4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
5. Remove from heat and stir in the cinnamon, nutmeg, cloves, vanilla extract, and a pinch of salt.
6. Pass the mixture through a fine strainer into a clean container and chill in the refrigerator until completely cold.
7. To serve, pour 30ml of Baileys into a glass and top it with the chilled eggnog.
8. Garnish with freshly grated nutmeg and serve.
