Banh Cuon Recipe:
BATTER:
In a large bowl mix
1 cup rice flour
3/4 cup tapioca flour
2 tbsp oil
pinch of salt
3 1/2 cups warm water
set aside for 15-20 minutes
FILLING:
In a large skillet / pan
drizzle olive oil, let it get hot
saute 2 cloves minced garlic for a couple minutes
add 1/2 lb ground pork, cook and break down into small pieces
1 tbsp fish sauce
1 tsp sugar
1 tsp kosher salt
mixmixmix
add 1 cup chopped jicama
1/2 chopped onion
1 cup re-hydrated wood-ear mushrooms, chopped
cracked pepper
cook 3-5 minutes
Crepe WRAPPER:
in a non-stick pan
wipe with oil
add 1/2 ladle of batter, spread around the pan evenly
cover with lid, let cook 1 minute until transluscent
Wrap up the filling into spring roll shapes
top with fresh bean sprouts, chopped mint, fried green onions, chopped cucumbers
fish dipping sauce:
2 tbsp sugar
2 tbsp rice vinegar
2 tbsp fish sauce
1/3cup warm water
