These are quick and super yummy!! Great to bring to a party or on the go!
Quick Cinnamon Rolls
Ingredients:
2 3/4 c. flour
3 T. granulated sugar
1 t. salt
2 1/2 t. instant yeast
In the pan -
1/2 c. water
1/4 c. milk
2 T. butter
1 egg
Filling:
1/4 c. (1/2 stick) butter, melted
2 T. cinnamon
1/4 c. brown sugar
Glaze:
1 c. powdered sugar
1 t. vanilla
2 T. milk or water
Directions:
To make the dough-
1. Preheat the oven to 375 degrees. In a large bowl (Kitchen Aid bow works best), mix together the flour, sugar, salt and yeast. Set aside.
2. In a small saucepan over low-medium heat, place the butter, water and milk together until melted. Add to dry mixture.
3. Use the dough hook attachment to blend, and add the egg. Knead in mixer for 3-4 minutes or until the dough is no longer sticky. Place in a lightly greased bowl, cover with plastic wrap and let it rest for about 5 minutes.
For the filling:
4. Melt 1/2 stick of butter in a small saucepan. In a small bowl, combine brown sugar and cinnamon. After the dough has rested, roll it out in a 15x9 inch rectangle.
5. Spread the melted butter all over the top of the dough. Sprinkle the cinnamon and sugar mixture over the top, leaving a 1-inch border around the whole dough.
6. Spread leftover melted butter in the bottom of our 8x8 pan, and also sprinkle with leftover cinnamon sugar mixture. Roll up the dough tightly and cut into 1-inch pieces. You should have about 12.
7. Place in the oven for 20-25 minutes, or until golden brown.
To make the glaze:
8. In a medium sized bowl, combine powdered sugar, vanilla extract and 2 T. milk or water with a fork. Remove from the oven and top with the glaze. Enjoy!
