🍽️ Ingredients:
Meat per kg
40% lean pork (400g)
40% pork neck (400g)
20% pork back fat (200g)
or
70% lean pork (700g)
30% pork back fat (300g)
Spices per kg:
25.5 g salt
2.5 g Cure #1
3 g sugar mixture (dextrose / sugar)
8 g mild paprika
2 g black pepper
2 g hot paprika (if hotter, add hot paprika)
0.25 g mace
