* Roll the dough into 8 balls, fit into two 4" cake pans, bake 350F 20-25 minutes until golden!
Hollandaise
- 65g butter heated to 200F
- 2 large egg yolks
- 1 tsp lemon juice
- pinch of salt
* heat butter to 200F on the stovetop and transfer to a pouring vessel
* use an immersion blender to whip egg yolks until doubled in size, slowly add heated butter while pulsing the blender. add enough butter until the mixture becomes thick like ketchup
* lastly season with lemon juice and salt
Poached egg
* crack an egg into a mesh strainer to rid of extra water
* heat water until boiling, then add 1/2 tbsp vinegar
* create a vortex by swirling the water, then pour the egg into the centre
* cook for 3 minutes and place into cold water
