Hello, hello my loves! You guys are craving some cookies, right? That why you are reading this post!And of course I am here to pamper you and give you many, tips, recipes, shortcuts to live a healthy life and free from GUILT! (I hate that word "GUILT" ahh).
Anyway, since I discovered this bean "Lupine" I am his mega-fan and I want to share why.
1.- It is very nutritive.
2.-High in protein.
3.-Very low in carbohydrates, since 100% of their carbohydrates are fiber.
4.-You can replace this flour in all your recipes.
5.-It is very good for people seeking to control blood sugar (fitness, PCOS, diabetics, etc).
As always, I invite you to believe 50% of what I say and to do your own research so that you can check the information.
Enough of mucho writing, jeje
here is this recipe:
INGEDIENTS:
* 3/4 T of lupine flour.
* 1 tsp baking powder (without aluminum).
* 1/3 T of monk fruit or coconut sugar.
* 1/8 tsp of salt.
* 1/4 T of chocolate chips or carob chips.
* 1/4 T of Aquafaba (Aquafaba is simply cooking water from cooking legumes such as chickpeas and white beans. When concentrated, the water is thick and vicous like egg white).
* 1/2 tsp vanilla extract
* 4 tbsp melted coconut oil
INSTRUCTIONS:
* In a bowl, pour the water from the chickpeas and with a mixer, batter until it foams (about 8 min). Put it aside.
* In another bowl, mix the dry ingredients.
* Add the coconut oil and vanilla to the Aquafaba bowl and mix again.
* Mix the dry ingredients with the wet ones and mix well.
* Refrigerate 30 to 45 min.
* Pre-heat your oven 380 F or 190 C.
* Mold the cookies with your hands and place them on a tray with ecological paper or reusable mat for baking.
* Bake for 10 to 15 minutes.
* Once you have removed them from the oven, let them cool for 5 to 10 minutes.
* AND ENJOY! Preferably with milk, tea, chai; or whatever is your favorite drink.
