Poke made from raw tuna or raw salmon is truly one of my favorite meals. Let me make one thing clear: "sushi grade" fish is a marketing term, not a regulatory one. I've eaten mail-order tuna from Amazon Fresh just to see how cheap I could go with it. But it's hard to enjoy your meal when you have food safety on your mind too severely, so this is a way for poke-lovers to have a fish meal at home that's *just barely* cooked enough to bring them total peace of mind.
Step 1: Cook a pot of rinsed white sushi rice in seasoned water
Step 2: Prep poke bowl toppings to taste
Step 3: When there are 8 minutes left on the rice's cook timer, drop 1.5-2lbs of 1-inch Atlantic salmon cubes on top of the steaming rice. Replace the lid immediately and steam for 8 minutes.
