RECIPE - SWEET AND SOUR CHICKEN WITH PINEAPPLES
This is a simple and quick chicken stir-fry dish, demonstrating the efficiency of advanced prepping when it combines with stir-frying. Through my method in prepping and freezing chicken in advance, you can have chicken ready for stir-fry in less than 10 minutes from the freezer to the wok. This will allow you to have chicken anytime you want, without having to wait for the chicken to thaw and then to slice them. This dish is simple and fast to cook, but it is also flavorful. By coating the chicken with cornstarch, the chicken takes on a slight crispy texture, making them more tasty when they are being shallow-fried. Furthermore, cooking this dish makes simpler by using a pre-made sweet and sour sauce. This is a good starting point for beginners or for someone who wants to cook a quick dish. For me cooking this dish is simple and quick due to advanced prepping and template-based cooking.
INGREDIENTS
- Chicken (thinly sliced) - 8 oz
- Scallions - 2 tbsp
- Sweet and Sour Sauce (Fusia Brand from Aldi) - 2 tbsp
PREPPING INSTRUCTIONS
- Coat chicken with 1 tbsp of cornstarch
STIR-FRYING
Spot Seasoning the Wok
- I heat up my Cuisinart 14-in stainless steel wok for 1 min under the highest heat setting.
- Add 1.5 tbsp of canola oil (or any oil with a high smoking point).
- Heat up the oil until it starts to gently smoke (usually about 1 to 2 min).
- Turn heat down to low to prevent the oil from smoking too much.
- This is the time when the wok is being seasoned.
- Let the oil smoke for another 15 seconds.
- The wok is seasoned and ready to be used.
Cooking Instructions
- Add chicken to the wok.
- Spread the chicken out in a thin layer using a pair of tongs over the surface of the wok.
- Shallow-fry the chicken for about 60 seconds.
- Flip the chicken over to fry the other side.
- Use the wok spatula to stir-fry the chicken for 20 seconds.
- Add sweet and sour sauce.
- Add pineapples.
- Add scallions.
- Mix all ingredients.
- The dish is ready to serve.
- The total cook time is 4 minutes.
