Ingredients and way about it:
Crust:
Generally Graham Crackers are used to make the cheesecake base but I have substituted with some Marie Biscuits.
Melted Butter.
Filling:
450g cream cheese, softened
50g sour cream
90g sugar
1 tsp vanilla extract
2 eggs
Toppings:
Fresh strawberries
Whipped cream
- Preheat oven to 325°F (160°C). Line a 6 cup muffin pan with liners.
- Mix graham cracker crumbs and melted butter. Divide evenly into liners, press firmly, and bake for 5 minutes. Let cool.
- Beat cream cheese and sour cream until smooth. Add sugar, vanilla, and eggs (one at a time, mixing gently).
- Spoon filling into liners and bake for 16–20 minutes, until just set. Cool at room temperature, then chill in the fridge for 1–4 hours.
- Top with strawberries and whipped cream.
