Ingredients....
1 Cup instant Couscous 250ml ( Moroccan, Israeli pearl or any other couscous products can be substituted.
1 Cup water 250ml
2 tablespoons Extra virgin olive oil
1/2 teaspoon salt
SALAD ITEMS🥗
1/2 Cup canned Chickpeas beans, drained and rinsed
1/4 Cup minced red Onion
1/2 Cup diced Cucumber remove seeds if any.
1/2 Cup diced red bell pepper
1/2 Cup Black seedless Olives pitted and sliced
1/2 Cup diced Roma tomato, 1/4 inch diced
2 tablespoons Parmesan Cheese
Herbs 🌿
1/4 teaspoon dried Oregano
1 teaspoon chopped basil
1 teaspoon mint
1 teaspoon parsley
Lemon Dressing 🍋
2 tablespoons Lemon juice
1 teaspoon Lemon zest
1/4 teaspoon Salt
1/4 teaspoon black pepper
3 tablespoons extra -virgin olive oil
1tablespoon red wine vinegar ( substitute for Balsamic, apple Cider or white wine vinegar )
Instructions...🔥
Bring water, salt and olive oil to a boil in a medium saucepan. Add couscous and stir quickly, turn off heat and set aside.
Let Couscous stand until 5 minutes then fluff with a fork and let cool.
Lemon dressing...
1. Combine lemon juice, olive oil, lemon zest, vinegar, salt and black pepper together in a small bowl whisk to for a thickened dressing.
2. In a larger bowl combine couscous and salad together, pour the dressing over it, mix all together and serve.
MAKE IT LOW CARB::: Substitute Couscous for Cauliflower rice instead, use 2 1/2 Cups, You can eat raw or sauté and then add with the vegetables.
