Ingredients:
large prawn, peeled and deveined
For sauce:
1/2 cup mayonnaise
2 tablespoons sweet chilli sauce
2 tablespoons Sriracha sauce
1 teaspoon honey
For coating:
1 teaspoon garlic powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chilli powder
1 cup all purpose flour
1/2 cup corn flour
Vegetable oil, for frying
Salt and pepper, to taste
Fresh spring onion, for garnish (optional)
Instructions:
In a medium-sized bowl, prepare the dynamite sauce by combining the mayonnaise, Sriracha sauce, sweet chilli sauce, honey, and chilli powder. Mix well until all the ingredients are thoroughly combined. Set aside.
Season the prawns with salt , soy sauce and egg white. Then, double coat each prawn in the prepared flour mix and beaten egg, ensuring they are well-covered.
Heat vegetable oil in a deep pan or skillet over medium heat. The oil should be about 1-2 inches deep to fully submerge the prawns.
Carefully place the coated prawns into the hot oil, making sure not to overcrowd the pan. Fry them for about 2-3 minutes on each side, or until they turn golden brown and crispy. You may need to fry them in batches to maintain the oil temperature and ensure even cooking.
Once cooked, remove the prawns from the oil using a slotted spoon or tongs and transfer them to a paper towel-lined plate to drain excess oil.
