Out of all delicious holiday season treats, there is one I particularly love: Lebkuchen. Not only are they seriously delicious, but their history is quite fascinating - it goes back to the 13th century.
Yes they are somewhat similar to our usual gingerbread cookies, but I find Lebkuchen taste much better - thicker and full of delicious holiday spices! Anyways, you can decide for yourself. Here are the ingredients:
½ cup / 100 g unsalted butter, softened
1 cup / 200 g sugar
1 tbsp vanilla extract
1 egg + 1 egg yolk
⅓ cup / 100 g of honey
2 tbsp cocoa powder (unsweetened)
1 tsp ground cloves
1½ tsp ground cinnamon
1 tsp ginger
Zest of 1 lemon
Pinch of cardamom
Pinch of nutmeg
Pinch of salt
1½ tsp baking powder
3 tbsp whole milk
4 cups / 480 g all-purpose flour, plus extra for rolling
For the glaze:
200 g powdered sugar
Approx 2 tbsp milk
