Serves 4
1kg of baby octopus, cleaned
2 tablespoon vinegar
2 cloves of garlic, crushed or chopped up finely
2 tablespoons olive oil
1/4 cup of chopped parsley
lemon juice from 1 lemon
Rinse the octopus.
Bring a pot of salted water to boil. Add vinegar to water. Add the octopus, bring to boil, simmer for 15mins, drain and set aside.
Fry garlic in olive oil. Add the octopus and combine well. Stir fry for 2-3 mins. Add parsley and lemon juice, mix. Ready to serve.
