Galette des rois
Ingredients:
egg x2
sugar 100g
milk 1tbsp
cornstarch 1tbsp
butter 50g(room temperature)
almond powder 125g
wine(rhum) 2tsp(optional)
vanilla extract 1tsp
puff pastry x2
egg yolk x1
Instructions:
1. In a salad bowl, mix the sugar and eggs.
2. Add the cornstarch dissolved in the cold milk. Stirring over low heat until boiling, let thicken and remove from heat.
3. Add the butter cut into pieces, almond powder, vanilla extract and wine, the wine is optional.
4. Place the dough obtained in the pie mold and hide the bean inside. I put a walnut instead.
5. Cover with the 2nd puff pastry, sticking the edges well, otherwise the batter will leak out.
6. Make designs on the lid and brush with the egg yolk. Prick the pastry with a knife.
7. Bake for 20mins at 180°C, check regularly for doneness!
