Omg why did it take me this long to try halloumi in pasta - if you haven’t tried it then what are you waiting for! This is definitely best eaten fresh rather than meal prepped, cold halloumi is not the one.
Serves 2:
100g orzo
225g block halloumi
1/3 cucumber, diced
1/2 red onion, finely sliced
1 roasted red pepper from a jar, diced
Handful of olives, sliced (garlic stuffed olives are the best)
Handful of mind, chopped
1-2tbsp runny honey
Kashmiri chili flakes
30ml extra virgin olive oil
Cook your orzo according to packet instructions. Meanwhile, dice your halloumi and pan fry. Once browned, add in the honey and chilli flakes and mix until the halloumi is properly coated. Mix through the orzo, halloumi and the rest of the other ingredients - enjoy!
