Colombo de Pêche a la Claire-Marie Dubois | Caribbean Fish Curry
One of the most famous dishes in the Caribbean includes the Colombo de Martinique which is a curry traditionally made from lamb, chicken or fish cooked in garlic, ginger and Colombo paste or powder. Residents also put many vegetables such as aubergine, pumpkin, sweet potatoes or other local root vegetables into the curry and it is delicious! I visited Claire-Marie Dubois (from La Cuisine de Claire-Marie) in her house to learn how to cook this super flavourful dish! She is mostly known for her glutenfree and haute cuisine style of cooking. Such a lovely person and a mentor in the kitchen! Hope you enjoy this episode. :-* Bon lapéti as they say in Creole!
