Russian stewed cabbage or Russian braised cabbage is also called Solyanka in Russian. Please note that this aromatic and hearty stew dish made with sour or fresh cabbage (or both) with some smoked meats and is NOT the same as the Solyanka, the soup.
It is very popular dish in Russia, especially in a winter time, when vegetables like cabbage, carrots and onions are widely available.
SOLYANKA
You will need:
1 head cabbage
2 carrots
1 onion
4-5 cloves garlic
1 tbsp tomato paste
4-5 frankfurters or polish kielbasa
spices: coriander, salt, black pepper
paprika, 2 bay leaves,
chili pepper
3-4 tbsp oil(avocado oil)
½ cup water
fresh herbs, dill, parsley
METHOD:
In a large deep skillet or chicken fryer add cooking oil and heat it up.
Add sliced onions and let browned, then add minced garlic and cook for 1 minute.
Add shredded carrots and cook until soften.
Add shredded cabbage and mix well. cook until wilted.
Add spices and mix.
(all spices are added to your taste, so is the salt and pepper)
Add tomato paste in the middle and dilute it with couple tablespoons of water, mix into cabbage.
Slice and fry up sausage pieces on both sides, so they are slightly browned.
Add to cabbage and mix.
close the lid and stew for 5-10 minutes.
Garnish with fresh herbs like dill or parsley and serve.
