Bechamel is a mother sauce. It is super easy to make. I made a small batch. Here is the recipe:
2 tablespoons unsalted butter
1 tablespoon all purpose flour
Half a white onion
3 cloves
1 bay leaf
8 ounces whole milk
Freshly ground nutmeg
Kosher salt
Freshly ground pepper (it is better to use white pepper)
Instructions:
1. Melt butter in a small pot. At low/medium heat.
2. Add all purpose flour. Let it cook until it smells like toasted nuts.
3. Add milk and stir frequently. Add salt and pepper.
4. Add onion pique. Let it simmer at low/medium heat for about 20 minutes or so. Stirring occasionally.
5. Once it reaches the right consistency, remove the onion pique, and pass through a sieve.
6. Put back in the pot, add nutmeg.
7. Stir and adjust seasoning.
