The preparation of the sandwich is very simple.
Slice a small durum wheat, baguette-type loaf in two and on the bottom half place fresh rocket, preferably wild, and top with slices of our organic cotechino (15-20 mm thick).
Add a few, very thin slices of nectarine with the peel on.
Top everything off with a drizzle of balsamic vinegar of Modena and roasted pine nuts.
