Khichini is a national dish of Balkars and Karachay. It’s a thin unleavened pie with cheese and potatoes and meat for fillings.
How to make Khichini? Easy :)
Khichini Ingredients: 8 servings
1 cup (240 g) kefir (or plain yoghurt)
2 cups (240 g) self-raising flour (1 ½ cups if using yoghurt)
3 (500 g) potatoes
good pinch of salt and pepper
1 cup (120 g) grated cheese such as cheddar
1 tsp Italian seasoning
1 tbsp butter
2 tbsps fresh parsley
Directions
1. Cook the washed potatoes until tender.
2. Pour kefir or yogurt into a bowl. Add baking soda. Then, little by little add the flour. Stir with the spoon.
2. Knead the dough. Cover and let it sit for half an hour.
3. For the filing, mash the cheese with fork.
4. Peel the potatoes. Then, add to the cheese. Mash and mix to combine.
5. Roll the dough. Divide into 8 equal parts.
6. Flatten each dough and put the fillings.
7. Connect all edges. Form into balls. Then, flatten each with a roller.
8. Fry each into a greased heated frying pan. Turn each side until a bit brown. When it swell just prick gently with a knife or toothpick.
9. Grease both sides with butter. Serve hot. Enjoy!
